COURSE DESCRIPTION:
In this course students have the opportunity to focus on the unique qualities of breads often served in the morning as part of our breakfast. You learn the special skills and techniques required to produce each recipe.

Recipes for this course may include:
- Brioche - Croissant
- Chelsea Bun - Danish
- Bagels - Sweet Breads
- Coffee Cakes - Poppy Seed Coffee Cake


COURSE OUTCOMES:
Upon successful completion of this course, the student will be able to:
·     Produce recipes according to the prescribed directions within the laboratory on the day / night of instruction
·     Demonstrate the correct procedures and techniques used in various exercises. (i.e. mixing and measure of
ingredients)
·     Use proper terminology related to products, ingredients, equipment and tools.
